Most DHCP environments are across subnets using DHCP relay at the 
router level.  It's just far more convenient to have 1 central system 
doing DHCP rather than a different host on each network.

Of course, he *could* do the same thing with a multi-homed system, 
but once you get past 3 or 4 subnets, that becomes impractical given 
the limited number of PCI slots in a system.  Of course, a single 
switch which supports VLANS and a little IP aliasing on the host can 
also solve that problem.  

Wow, the more I think about it, the more ways I can come up with to 
server DHCP than I ever really cared about before :)
