Looking for a good portable linux system

I'm not worried about theft at this point, although given the difficulty
I'm having finding something that meets these requirements...

That's why I want a system that can go in the cargo hold and through
checked baggage instead of security. But I am thinking of constructing a
case just for it that contains the LCD displays too.

Believe me, I've checked through many more suspicious things than a
computer; the latest being a UPS with lots of suspicious looking
batteries. I did notice that they opened the box and checked one of the
batteries, and oddly enough a cable, but as with all other times, it was
all put back together and re-packed relatively well.

The biggest headache I've had was when I checked through 70lbs of frozen
beef. They couldn't figure out what it was, and made me unpack one of
the bundles. They were still very suspicious until I told them it was
"ships stores", scraped some of the frost off and they saw the ground
beef through the packaging. But this was the day after they started a
condition yellow, so they may have been a bit jumpy.
