If it wasn't obvious before, I'm a Mandrake lover.  It's got the 
functionality of a basic RedHat system with a LOT of ease-of-use 
features built in.  On a standard machine, the install is a piece of 
cake.  I'd argue it's easier to install than Win2k. (...And trust me... 
I've installed and reinstalled Win2k enough times to know...)

Mandrake has some nice, easy defaults for the common desktop user, such 
as KDE and it's associated apps.  I'd be happier if Mozilla was the 
default rather than an option, and if an instant messenger client was 
right there in your face after install, but hey... It's a start.

Mandrake even has wizards for setting up common things like web and 
email servers and webmin is installed by default.  KDE is set up enough 
like Windows that most people can fall right into it.

For geeks, it does install a LOT of stuff you'll probably never use, so 
it isn't the most efficient Linux distro out there, but I wouls argue 
it's the easiest other than the boot-from-CD Knoppix veriety out there.
