I have AFPL ghostscript 8.51 installed and it has 2 utilities that might 
help you:

ps2ascii
pdftops

The first converts PS to ascii text, the second converts PDF to PS. I 
think the first might also handle PDF.

I've not used them. I found them by doing man -k pdf
