Moving data from one server to another

I've been dealing with that for the last 6 months after starting at my current 
job and I sympathize.  Ultimately, I find the best thing is to build the new 
box with the old software the best way you know how and then worry about 
migrating data and custom functionality, test a lot, and shoot for it.
