I would read the man pages for the raidtools and mdadm tools packages.
I would also read the Software RAID HOWTO from the LDP.  None of them
are written like a polished book, but they're free, and convey most of
the information you're looking for.  You might also try googling for
generic information about RAID and reading some white papers out there.

For Linux specifc information Linas Vepstas maintains a number of good
pages, one of which is http://linas.org/linux/raid.html, where he
either has written about or has links to a variety of Linux tools for
managing RAID.
