Mike,

Though I've switched away from (ex)mh, I do recall setting this in my
exmh-defaults file:

  *mime_alternative_prefs:        text/plain text/richtext text/html
  *seditDefaultType:              text/plain

So, if he's sending e-mail wrapped in a mime part, this may do the
trick to get it to show up as "plain text" for you.  You should also
be able to configure exmh to display a better font when it sees mail
like this.
