My experience was similar and I first set it up about 1.5 years ago I think.  
The dial scripts aren't just published by the various providers - I only 
assume they intend for you to use their software or something for this 
purpose.  But I found several resources out there that listed lots of 
connection settings for different providers and eventually through trial and 
error, got a working setup with Debian Sarge, my Palm Treo 650, and T-Mobile.
