Xeon 64-bit?

amd64 is the correct distro to use, however, you'll want to dump the
amd64 kernel and install the EM64 kernel.  The EM64 kernel is
optimized for the Intel x86 64 chips.

ia64 is specifically for Itanium, which is a completely different architecture.
