For Xen CentOS is probably the most stable.  It's old, though, kernel
2.6.18+backports.  Current Xen is *very* bleeding edge, it'll probably
show up in Fedora 12 updates or Fedora 13.  SuSE has ported the 2.6.18
Xen up to 2.6.29, though, if you need the newer kernel features.
