How to fix Thunderbird's quoting?

There used to be a way to control quoting. Edit/Preferences/Composition,
but the old quoting tab is missing (at least on T-Bird 10. However there
are a couple of add-ons you could try such as Quote Collapse and Quote
Highlight. I have not tried either of them.
