I'll second the use of mplayer. Its a very nice multimedia player.
I've done some work writing tools to convert SGI movies to and from Quicktime.
The use of MJPEG is fairly common where Quicktime is just the wrapper. The
OpenQuickTime project has some nice tools to break down movies into individual
images. You can then take those images to build an mpeg movie or what ever
format you want.
