What about the software side of the discussion.  Assuming a basic
backup strategy around either CD-R or DVD-R, what are your favorite
tools for scheduling and handling nightly ( incremental ) backups and
periodic full?

I'm looking to put together a more automated strategy for home use.  I
want to be sure to catch uploaded pics from our camera, modified docs
( which could be spread over many possible locations on the
filesystems ) config and content changes to web and app servers I'm
playing with, etc.  For the last several months I've pretty much been
doing it by manually selecting the directories for burn, but it's
getting harder to make sure I remember what I've been changing and not
burning files unnecessarily.  I was going to write a script to help
provide my list but if there's already an OOS solution out there
that's tried-and-true...

For myself I am very happy and comfortable w/ command-line solutions. 
However, an intuitive GUI would help my significant other participate
as well.  At the same time, I would prefer if it could be kicked off
via cron.  Maybe something that's configured and can run restores via
GUI but executed via cron?  Maybe I'm asking too much?  :-)
