I usually suggest RT (Request Tracker). It's a very good CRM system that has web, email, and phone interface (if your phone system is Asterisk :-)

It depends on what you mean by format suitable for ... a customer'. I generally like my logs just as they are in syslog. But, you can always look at logcheck, BB, MRTG, or any other server/network monitoring tool that will produce reports.
