NFS stops responding

I think you said it's all linux, client + server.
Are the netmasks the same? I've seen one way networking with mismatches.
FWIW I've found Linux NFSv4 doesn't work well with Solaris v4. I
force it to v3.
HP-UX 11 misimplemented NFSv3 and it shows up if a Solaris server has
ZFS under it. Forcing the client to v2 fixes that.
